Boppee's Pork Over Rice

Boppee's Pork Over Rice is one of our favorite comfort foods, especially during winter time.  It is an easy recipe that is equally delicious and comforting.  We suggest giving it a try!



Ingredients:
  • 2 cans Campbell's Cream of Mushroom Soup
  • 2 cups water
  • 1lb boneless pork chops
  • 2tbs olive oil
  • 1/2tsp kosher salt
  • 1/4tsp black ground pepper
  • 1/2tsp garlic garni (if you don't have this seasoning you can substitute with garlic salt, onion powder, paprika, dried parsley, a dash of red pepper flakes)
  • Optional:
    • white rice or egg noodles


Step1: Remove excess fat from boneless pork chops.  Cut into equal bite sized pieces and season with salt and pepper.  Heat olive oil in a skillet over medium heat, add pork chops and cook until browned and cooked through. **If cooking with white rice, start preparing.  Begin cooking white rice before prep'ing the meal. 


Step 2: Reduce heat to medium-low.  Add in cream of mushroom soup and water.  Stir until mixed thoroughly.  Add in the garlic garni seasoning.  Add additional salt and pepper to taste.  **If eating with egg noodles, begin cooking noodles.


Step3: Once the soup / water / pork chop mixture comes to a slight boil, reduce heat to low and cover.  Cook for an additional 10 minutes, stir occasionally. Add over your rice or noodles.  Done!


Viola!  You're finished.  We love eating over white rice or egg noodles.  I consider this more of a winter meal as its a bit warm and heavy for some of our sunny, summer months here (but that doesn't often stop me!).  I hope you enjoy Boppee's Pork Over Rice!
